FOOD ADDITIVES (IMPROVERS) IN MINCED MEAT

Abstract

In the article the questions concerning the use of food additives (improvers) used in minced meat are considered. Minceв meat is chopped meat crushed by means of heavy knife (chopping knife) or a meat grinder. Minced meat is made of beef, pork, game and by-products. Food additives are necessary in the technological process of production. They provide commodity qualities of the product and guarantee success in the market. Meat industry is conservative in the use of food additives. Today a number of preservatives and dyes is permitted for use. However there are no methods of their use monitoring as there are no ways of defining the content of those additives which are forbidden, for example, amaranth dye (Е123). Very often recently we hear from the experts of meat processing enterprises suggestions to include various food additives in national standards on meat production. But the work on inclusion of dyes (preservatives, emulsifiers) should begin with the development of the national standard on the methods of their estimation. Besides, the assortment of food additives has sharply increased. Therefore there is a question on safety of these additives for human body.
